‘Fortune’ white malt

Distilled from single origin, single malt, we source the finest malt possible to produce this very unique spirit. You’ll be greeted with a soft caramel chew, a clean light malt aroma and dried fruit sensation. A new make spirit so intriguing for its age we couldn’t wait to release it.

‘Fortune’ Signature Dry Gin

Serving suggestion: Ice, tonic & garnished with honeydew melon

The signature dry gin uses eight unique botanicals including our star Far North Queensland honeydew melon. Each botanical is bathed and boiled in our beautiful pot reflux still. Blended to a precise 41% to ensure each botanical is tasted within each layer of the gin. The perfect balance between a London dry and a new wave gin. Super approachable and delectably refreshing.

'Fortune' Vodka

Australian Wheat

The 'Fortune' vodka is made exclusively with Australian-grown wheat and filtered Noosa water which has gone through two filtering stages; ceramic and carbon. The flavour profile reflects crisp pear and subtle coconut. Once blended it receives a final filtration through coconut charcoal husks.

An iconic Noosa duo, Fortune Distillery and Sum Yung Guys have collaborated to create a unique Gin, showcasing the vibrance & creativity of the restaurant through the bold curated flavours of the distillery.  To find that Pho flavour we dove down the rabbit hole with fish sauce, the initial taste, and aroma. The inclusion of fish sauce is an example of how much the boys like to joke around, underlying the bold yet humorous flavours that sit the basis of a good Pho. This Gin is designed with clean distinct flavours such as Spring Onion, Bean Shoots, Chilli, Seaweed, and for some “meatiness,” the inclusion of Porcini Mushrooms. Much like Pho we topped this behemoth spirit with a fresh herb salad, complimenting the alcoholic soup with a gorgeous freshness.
